At The Annapolis Pottery, our products are designed to enhance your home and to bring vibrancy to your life and entertaining. We believe that preparing and enjoying food with family and friends is an essential part of a fulfilling life!

So with that in mind, it's become our tradition to serve interesting dishes during each holiday Midnight Madness event and at other times during the year.  Here are a number of our recipes, just for you.

Thai Peanut Meatballs

These are delicious - a great combination of flavors!

Meatball ingredients...

2 tablespoons olive oil 1/4 cup chopped cilantro
1 cup onion, thinly sliced 2 tablespoons Thai red curry paste
2 lbs ground turkey 1/2 cup bread crumbs
3 cloves fresh garlic, minced 1 egg
1 teaspoon fresh grated ginger 1 egg yolk


To prepare the meatballs, add 1 tbsp olive oil to a large skillet over medium heat. Cook the onions for 4-5 minutes until slightly soft. Remove onions from heat and set aside.

Add the turkey, garlic, ginger, cilantro, red curry past, breadcrumbs, egg, egg yolk and cooked onions to a large bowl. Stir to combine ingredients, and then form 1-1.5" meatballs. 

On the same skillet, add the other tablespoon of olive oil and bring to medium heat. Add the meatballs and brown on all sides, 2-3 minutes per side. Place cooked meatballs into a slow cooker. 

Sauce ingredients...

1.5 cups coconut milk 2 tablespoons soy sauce
 1 cup creamy peanut butter 1/4 cup brown sugar
1/4 cup Thai red curry paste 1 tablespoon fresh lime juice
2 tablespoons apple cider vinegar


Add all the sauce ingredients to a blender of food processor and blend until smooth and creamy. Pour the sauce over the meatballs in the slow cooker.

Cook on high for 2 hours, or on low for 5-6 hours.

Serve as a main dish or an appetizer - enjoy!



Mississippi Caviar

Southern and sophisticated, a quintessential American treat!

(3) 16 oz. cans black-eyed peas, drained  1/4 cup drained and finely chopped pimento
1/2 cup finely chopped green pepper 1 garlic clove, chopped
1/2 cup finely chopped red pepper 1/3 cup red wine vinegar
3/4 cup finely chopped hot pepper 2/3 cup olive oil
3/4 cup finely chopped onion 1 cup dijon mustard
Dash of tabasco sauce Tortilla chip


In a large mixing bowl, combine the peas, bell peppers, hot peppers, onion, pimento and garlic. In a separate bowl, whisk the vinegar, oil and mustard and pour over the bean mixture. Mix thoroughly. Season to taste with salt and tabasco. 

Refrigerate until ready to serve. Great with scoop tortilla chips!

 

Cranberry Jalapeño Cream Cheese Dip

Great for the holidays - or anytime!

2 tablespoons lemon juice  1/4 cup cilantro with stems
1 bag fresh cranberries 1/4 cup green onions
1-1/4 cup sugar 2 blocks softened cream cheese
1/4 teaspoon cumin


In a food processor, chop cranberries finely. Finely chop green onions and add to cranberries in a bowl along with lemon juice, sugar, cumin and cilantro.

Spread the cream cheese evenly in a pie dish, about 1/4" thick. Pour cranberry mix over the cream cheese and spread evenly. 

Serve with ginger snaps or crackers - delicious!

 

Ginger Citrus Hot Toddy

Spicy fresh ginger and sweet apple cider pair beautifully with toasty bourbon in this festive drink!

Prep time: 5 minutes
Cook time: 20 minutes
Ready in 25 minutes
Serves 4.

(2) two-inch pieces of ginger  (3) star anise or (1) cinnamon stick and (1) teaspoon Chinese 5-spice powder
2 cups apple cider 2 cloves
1 cup water 2 oranges
2 tablespoons honey 8 oz. bourbon


Step 1:  thinly slice the ginger. Into a medium pot, add ginger, cider, water, honey, cinnamon / star anise and cloves.

Step 2: heat and bring to a boil. Reduce heat and simmer for 10 minutes, stirring occasionally. 

Step 3: cut oranges into half-moon slices. Add half of the orange slices to the pot. Remove from heat and stir in bourbon. Strain the mixture and ladle into serving glasses. Garnish with remaining orange slices.

Enjoy - in moderation!

 

Spiked Cobbler Holiday Punch

A delicious holiday cocktail for your holiday entertaining!

3 liter cranberry-pomegranate juice
1 tbsp Chinese 5-spice
64 oz (1/2 gallon) spiced apple cider
2 sticks unsalted butter
1/2 cup ginger liquor
Ginger to garnish
20 oz dark rum


Melt butter and keep separate. Combine other ingredients in a large pot, stir and warm. Add melted butter. 

Serve and enjoy in moderation!
