Ingredients

(3) 16 oz. cans black-eyed peas, drained

1/4 cup drained and finely chopped pimento

1/2 cup finely chopped green pepper

1/2 cup finely chopped red pepper

3/4 cup finely chopped hot pepper

3/4 cup finely chopped onion

1 garlic clove, chopped

1/3 cup red wine vinegar
-
2/3 cup olive oil
-
1 cup dijon mustard
-
Dash of tabasco sauce
- Tortilla chips or corn chips
Instructions
- Step 1. In a large mixing bowl, combine the peas, bell peppers, hot peppers, onion, pimento and garlic. In a separate bowl, whisk the vinegar, oil and mustard and pour over the bean mixture. Mix thoroughly. Season to taste with salt and tabasco.
- Step 2. Refrigerate until ready to serve. Great with scoop tortilla chips!
