Mississippi Caviar

Southern and sophisticated, a quintessential American treat!


  • (3) 16 oz. cans black-eyed peas, drained

  •  1/4 cup drained and finely chopped pimento

  • 1/2 cup finely chopped green pepper

  • 1/2 cup finely chopped red pepper

  • 3/4 cup finely chopped hot pepper

  • 3/4 cup finely chopped onion

  • 1 garlic clove, chopped

  • 1/3 cup red wine vinegar

  • 2/3 cup olive oil

  • 1 cup dijon mustard

  • Dash of tabasco sauce

  •  Tortilla chips or corn chips


  •  Step 1. In a large mixing bowl, combine the peas, bell peppers, hot peppers, onion, pimento and garlic. In a separate bowl, whisk the vinegar, oil and mustard and pour over the bean mixture. Mix thoroughly. Season to taste with salt and tabasco.
  • Step 2. Refrigerate until ready to serve. Great with scoop tortilla chips!
